Model #1 - Big Chopper - Chef's Knife
Friends and family have asked me repeatedly over the years, “Why don't you design a kitchen knife?” Well, I finally said yes, especially after my wife, who is a master cook, started complaining about the quality and performance of our personal kitchen knives. And this is the first one that I designed. Actually, that's a fib. It's probably about the 20th design I tried before I hit the right one and one my wife approved of.
There were always things that were just plain wrong about the designs in all of the culinary and chef's knives that were already out there.
I always have three goals in mind whenever I design any knife. They are performance, safety, and comfort. Each one is as equally important as any of the others because if even one of those traits isn't fully addressed, you just have a piece of junk that will either fail you or hurt you, and it will end up where it belongs, in your kitchen junk drawer with all the other knives you'll never use.
We tested a great number of well-known (and sometimes very expensive) chef's knives during the development of this design. And finally, I concluded that almost all culinary designs were about the blade, the blade-the blade. Little to no attention was ever given to the attributes of safety or comfort. Well, I've been designing high performance knives for the hardest knife users on the planet for over 40 years, and now I've used that experience-hard-earned experience and reputation to bring you the Emerson Master Chef J, a knife that will faithfully serve all your cooking and culinary needs. For a chef's knife, this is a universal design in both size and shape. And with the new Emerson ergonomic safety handle, will be a joy to use in any kitchen for decades to come.
Ernest Emerson started making custom knives in his garage in 1979. He rapidly rose to prominence as a knife maker due in equal parts to his expertise as a craftsman, (tool and die maker), his artists eye for design, and his practical experience as one of the world’s most sought-after and respected hand-to-hand combat instructors.
Emerson’s work has been featured and exhibited at the Metropolitan Museum of Art and the Smithsonian Museum. There are only a handful of living artists who can make that claim. As an instructor in hand-to-hand combat and edged weapon skills, Mr. Emerson has taught the most elite warriors on earth, from the US Navy SEALs to the Guards of Parliament in London and everywhere in between.
He is the author of scores of articles, books, and videos regarding tactics, training and combat. As one of the most sought after instructors in the world he is in high demand for seminars and lectures to civilian, military and law enforcement agencies.
He is an inducted member of The Martial Arts Hall of Fame, along with such venerable names as Bruce Lee and Chuck Norris. In fact he is the only knife maker known who also owns and operates his own training facility, the world-class “Black Shamrock Combat Academy Gym” in Los Angeles, California.
At a time when knives are designed by graphic artists and 22-year-olds who never did more than use a knife to sharpen a pencil, the name Emerson and the company Emerson Knives stands head and shoulders above the rest.
